>> Brownie Oatmeal Cookies
2 / 3 cup whole wheat flour
1 / 3 cup sugar
1 cup quick cooking oatmeal
1 / 2 cup unsweetened cocoa powder
1 teaspoon baking powder
1 / 4 teaspoon salt (optional)
1 each powdered egg substitute (11 / 2 tsp. Mixed with 3 tablespoons water)
1 / 3 cup corn syrup, light or dark (or substitute honey)
1 teaspoon vanilla
Mix egg substitute, vanilla and syrup. In a separateBowl and mix to dry ingredients to a well, add liquid and stir until moistened. Spritzed on a baking sheet about the form. 2 dozen cookies. Bake at 350F for about 10 minutes Cool on sheet / wire rack for 5 / 5 minutes. Serves 24th
>> Brownie Fruit Pizza
1 / 2 cup reduced-fat table spread (1 stick) - Soft
1-3/4 cups sugar - divided
4 eggs - divided
2 teaspoons vanilla - divided
1 cup flour
3 / 4 cup unsweetened cocoa powder
1 package Philadelphia FatFree Cream Cheese - soft (8 oz)
2 cups fresh fruit, assorted - cut-up
Mix table spread and 1 1 / 2 cups of sugar with electric mixer on medium-high heat until foamy. Add 3 eggs and 1 tsp. the vanilla, mixing until blended. Flour and cocoa. Spray 12-inch round pizza pan with cooking spray Teflon. Spread brownie batter into the pan.
Bake at 350 degrees for 15 minutes.
Beat cream cheese with electric mixer on medium speed until smooth. Addremaining 1 / 4 cup sugar, 1 egg and 1 tsp. Vanilla, mixing until blended. Distributed over brownie. Bake 15 minutes. Cool. Refrigerator. Top with fruit.
Serves 12th
>> Ming Chocolate Brownies
1 cup flour
1 / 2 cup butter or margarine, soft
1 / 2 teaspoon salt
4 eggs
1 teaspoon vanilla extract
16 oz Can chocolate-flavored syrup
1 cup sugar
Filling:
Sugar 2 cup confectioners'
1 / 2 cup butter or margarine, soft
1 tbspWater
1 / 2 teaspoon mint extract
3 dr Green food coloring
Toppping:
10 oz Mint chocolate chip
9 EL butter or margarine
Combine first seven ingredients to give a large bowl, beat at medium speed for 3 minutes. Pour batter into a greased 13-inch x 9 inch x 2-inch baking pan. Bake at 350 degrees 30 minutes (top of brownies appear wet). Cool completely.
Combine filling ingredients in a medium bowl, beat until creamy. Distributed over cooledBrownies. Fridge to solidify. Melt For topping, chocolate chips and butter over low heat in a small saucepan. Allow to cool for 30 minutes or until lukewarm stir. Spread over filling. Chill before cutting. Stored in a refrigerator.
