Drop Cookie Recipes For Diabetics

If you are tired of buying the more expensive cookies, or they give up to save money, try these quick and easy Oatmeal raisin cookies sweetened with orange juice or orange drop cookies. The Orange Drop Cookies do remember a small amount of sugar you this to your diet.

OATMEAL RAISIN DROP COOKIES

1 cup all-purpose flour

1 cup rawOatmeal

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 / 2 teaspoon ground nutmeg

1 / 2 teaspoon baking powder

1 / 8 teaspoon ground cloves

3 / 4 cup frozen apple juice concentrate, thawed

3 tablespoons egg substitute

2 tablespoons margarine, melted

2 tsp vanilla extract

1 / 2 cup raisins

Preheat oven to 375 degrees. Spray sheets of Teflon cooking spray. Flour, oatmeal, baking powder, cinnamon, nutmeg, baking powder, and cloves in a large bowl. The remainingIngredients in a medium bowl, mix well. In the dry ingredients, mix well. Cover and refrigerate for 20 minutes. Remove from the refrigerator and place 2 tablespoons of dough 2 cm apart on the prepared baking sheets. Bake 20 minutes, until lightly browned. Cool completely on wire rack.

Yield: 28 cookies

Orange Drop Cookies

1 cup butter, softened

1 1 / 2 cups Splenda

1 / 2 cup sugar

3 eggs

1 / 3 cup unsweetened orange juice

1 tablespoon grated orange peelBowl

4 cups flour

2 teaspoons baking powder

1 teaspoon baking powder

In a bowl, cream butter, sugar and Splenda together. The eggs, orange juice and orange peel. Combine the flour, baking powder, and baking soda. Gradually mix the flour mixture to the cream and mix well. Drop by teaspoons 2 inches apart on a greased baking sheets. Bake at 350 degrees for a tan 12 to 14 minutes or until the edges begin. Remove to wire racks of cool.

Yield: 8Dozen

Note: These cookies contain a small amount of sugar. Remember this when you work in your diet. Treat yourself and not over!

TASTY PINEAPPLE CAKE

1 / 2 cup salt-free butter

2 1 / 4 cup Equal Sugar Lite, divided

2 eggs or 1 / 2 cup egg substitute

1 1 / 2 cups flour

1 teaspoon baking powder

1 / 2 teaspoon baking powder

1 / 4 teaspoon salt

1 / 2 cup fat-free milk

4 slices of unsweetened canned pineapple, drained on a paper towel

Non-stick vegetable cooking spray

1 / 2 cup unsweetened pineapple juice

Preheat oven to 350 degrees. Spray a 6-cup BundtPan with cooking spray and set aside.

In a large bowl, combine butter and stir 2 tablespoons Equal fluffy. The rest of Equal, except for 1 tablespoon. Eggs, 1 at a time and beat at medium speed of electric mixer. Flour, baking powder, baking soda and salt. Add to cream mixture alternately with milk, beginning and ending with the flour mixture. Beat at low speed after each addition. Cut pineapple into 1/2-inch pieces and gently into the foldDough. Spoon batter into prepared Bundt pan. Tap down to remove air bubbles. Bake 45-50 minutes, or until a toothpick inserted in the center of wood comes out clean.

While cake is baking, combine pineapple juice and the reserved 1 tablespoon Equal. Stir well to ensure Equal is resolved. When cake is removed from the oven, immediately pour mixture over the cake. Let cake stand in the pan for 5 minutes. Remove from pan and cool on a wire rack.

12Servings. Each serving equals approximately 130 calories, 17 grams carbohydrates, 3 g protein

BANANA SPLIT CAKE

Crust: 2 cups biscuit crumbs

1 stick unsalted butter, melted

Filling: 3 small pkgs sugar-free vanilla pudding mix

3 cans fat free evaporated milk

Surface: 2 medium bananas, sliced

1 large can of crushed pineapple in its own juice

1 box sugar-free whipped topping

3 tablespoons chopped walnuts or pecans

3 tablespoons sugar-free chocolate syrup(I recommend Russel Stover brand)

Combine pudding mix and milk until thickened. In the refrigerator to chill, while the crust. To make crust, mix together graham crackers and butter and press the bottom of a 9 x 13 inch pan. Remove stuffing from the refrigerator and on the upper crust. Add topping ingredients found in a time in the order listed. Currently stored in the refrigerator until serving.

PEACH CAKE

1 box white cake mix sugarfree

1 1 / 4 cups water

1 / 3Cup canola oil

3 / 4 cup egg substitute

1 small box sugar-free peach gelatin

Preheat oven to 350 degrees. Easy to spray a 9x13-inch baking pan with non-stick vegetable spray. In a large bowl, beat together cake mix, water, oil, egg substitute and dry gelatin with electric mixer on low speed, about 30 seconds until blended. Increase speed to medium and beat two minutes longer. Pour batter into prepared pan. Bake 35-40 minutes, until lightly browned and a toothpickinserted into the center comes out clean. Remove from oven and cool until barely warm. Create a fancy paper doily sprinkle on cakes and sugar-free icing sugar to decorate.

To sugar-free icing sugar:

Put 3 / 4 cup granular Splenda and 2 tablespoons cornstarch in a blender and mix until it becomes a very fine powder. 0 grams of sugar and only 4 carbs per tablespoon.

An Angel of an Ice Cream Cake

Ice Cream cakes are always something special. They are a perfect blend of rich and creamy ice cream with moist cake and smooth glaze. This dessert treats are easy to make if you use business bought ingredients and a little imagination.

First things first, write your shopping list. You need;

1. Angel Food Cake

2. Your Favorite Flavor of Ice Cream

3. Frozen Whipped Topping

4. Fresh fruit or chocolate garnish

If youbring home all the ingredients, place the cake and the ice in the freezer for about an hour. Allow to thaw the frozen whipped cream lining up to the counter and cut into slices garnish of fresh fruit or chocolate in decorative piceces to the top of the cake.

After about an hour to remove the ice and let it thaw for about 20 minutes. Then remove the cake from the freezer and cut into three horizontal layers.

Stir the ice mix with a wooden spoon, until itsmooth and creamy, then frost between layers of cake with your favorite flavor of ice cream. When assembled Frost outside of cake with the thawed frozen whipped topping. You can then garnish the cake with fruit or chocolate.

Put the cake back in the freezer until ready to serve.

Old-Fashion Coffee Cakes From Grandma's Recipe File

Coffee cakes are not only great coffee, but as a hostess gift, welcome to the neighborhood gifts, new baby gifts, etc. They are also ideal for working together with employees, Bible studies, etc. After a couple of recipes from my vintage Recipe Collection. you are sure to be favorites.

CRUNCHY BRAN Coffee Cake

1 1 / 4 liters of boiling water

1 cup bran, 100%

1 / 2 cup butter, softened

1 / 2 cup sugar

1 / 2 cup brown sugar

2Eggs

1 packet of vanilla sugar

1 1 / 4 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 / 4 teaspoon salt

Covering:

3 tablespoons butter, melted

1 / 4 cup bran 100%

1 / 4 cup brown sugar

1 / 2 cup broken walnuts

Combine boiling water and bran in small bowl let stand for 2 to 3 minutes. In a separate bowl until fluffy, cream butter and sugar. Eggs, one at a time beating after each addition, add vanilla. CombineFlour, baking powder, cinnamon and salt, mix in the cream mixture until blended. Add bran mixture, stirring to blend. Pour into a greased 9-inch round cake pan or 8-inch square. Bake at 350 degrees for 30 to 40 minutes. Combine topping ingredients, cake, sprinkle coffee. Grilling for 2 to 3 minutes, or throws up bubbles.

COFFEE crumb cake

2 cups sifted flour

1 teaspoon salt

1 / 2 cup sugar

2 teaspoons baking powder

1 egg, beaten

1 cupMilk

1 / 3 cup vegetable oil

Preheat oven to 375 degrees.

Mix and flour, salt, sugar and baking powder. A well in the center of the mixture and put in egg, milk and oil. Stir only enough to dampen all the flour mixture. Pour into a square that has been greased baking pan.

Topping:

1 / 4 cup flour

1 / 2 cup sugar

1 teaspoon cinnamon

2 tablespoons butter

Flour, sugar and cinnamon in a small bowl. Cut in butter. Sprinkle topping on batter. Bake for 35 minutesat 375 degrees.

Note: A quick and easy coffee cake is not overly sweet.
